Green Teas
The leaves of the plant Camellia sinensis
are the source of all tea. Green tea is the unadulterated form of
these leaves. Only minimal processing occurs after the leaves are
harvested, usually in the form of heat and/or steaming. Shortly after
the tea is heated it is carefully dried into the ready for consumption
commodity found in most kitchen pantries. These techniques are employed
to secure the qualities and freshness of the tea. Specifically preserving
the potent antioxidants (polyphenols) that are present in the newly
harvested leaves. Antioxidants are the active health-producing elements
in the tea. They have been proven to protect the body against a host
of aliments from the common cold to cancer. Green tea posses the highest
level of antioxidants in all the various forms of tea. Combined with
the numerous essential vitamins and minerals found in green tea, it
is truly healing beverage. It also contains the least amount of caffeine
in found any (non herbal) tea; it takes about 8-10 cups of green tea
to equal one cup of coffee.
There are many different types and
grades of green tea. The factors that determine the varieties of
green tea are many: where the tea is grown (region), climate and
elevation, when the tea is harvested, what part of the leaves are
used, size of the leaves, type of processing, etc… These distinctions
add to the mystique of tea, ensuring that no two teas are alike.
